This looks delicious! What are chia seeds? I'm not familiar with them, but always looking for new ingredients and foods to try! - 9/29/09

Chia seeds are consider a "superfood" and are high in soluble fiber. They are also hydrophilic, meaning they absorb a lot of water for their size and add a nice gel-like consistency to dishes. The gel slows conversion of carbs to sugar, making them good fuel for energy without a sugar high/low.
