Creamy, soothing and filling! Creamy, soothing and filling!
Number of Servings: 4

Ingredients

    1/2 package frozen cauliflower
    1 large baking potato, peeled and cut into chunks
    1 cup chopped onion
    2 cloves peeled garlic
    few red pepper flakes
    2 cups chicken broth
    1 T. butter or margarine
    1/2 cup fat free half and half
    salt and pepper to taste
    1/4 cup chopped scallions (opt.)
    Sprinkling of shredded reduced fat cheese

Directions

Place frozen cauliflower, potato, onion, garlic, a few red pepper flakes and chicken broth in slow cooker. Cover and cook on low for 8 hours. Transfer in portions to a blender, or use an immersion blender, to blend until smooth. Add butter and cream. Add seasoning to taste.

Serve with a sprinkling of grated low-fat cheese and scallions. Makes 4 servings.
