Introduction

Get the driest blue cheese you can find or leave a small piece out overnight to help dry it out. It has such a strong flavor that you want the crumbles to be very small. Ingredients

    3 large eggs
    1/4 cup 1% milk
    1 tspn dried parsley
    1/2 tspn dried thyme
    3 dashes salt
    3 dashes of black pepper
    1 scant Tbspn of finely crumpled blue cheese

Directions

Preheat a 9" nonstick frypan over low heat. Combine all ingredients except the blue cheese in a mixing bowl. Wisk with a fork for about 10-15 seconds. Once fry pan is heated, give a 1 1/2 second spray of the non-stick canola cooking spray (you can also use olive oil cooking spray) to the frypan. Pour egg mixture into pan and constantly keep scraping the eggs off the bottom of the pan with a rubber or silicon spatul in order to prevent scortching of the egg mixture. When almost done to you desired level of dryness, remove pan from heat and adjust the seasonings if need be. Sprinkle the blue cheese evenly over the eggs and return the pan to heat for about 5 to 10 seconds. The eggs are ready to serve when the blue cheese is barely beginning to mels. Makes two servings.
