Introduction

Great Fall Seasonal favourite. Goes great with cold meats and on top of salad. Great Fall Seasonal favourite. Goes great with cold meats and on top of salad.

Ingredients

    20 Ripe Tomatoes
    6 Peaches
    6 Pears
    6 Cooking onions
    3 Red Peppers
    3 Green Peppers
    3 cups of Brown Sugar
    2 Tbsp of salt
    4 cups pickling spices
    6 Bay Leaves
    3 tsp curry powder

Directions

Wash fruit and veg, chop into small pieces and place into a large cooking pot. Dissolve sugar and salt in vinegar and pour over chopped fruit and veg. Place pickling spices and bay leaves into cheesecloth and tie off. Add to the pot of veg and fruit with the curry powder. Bring to a boil and then gently simmer for 2 hours. When done, remove spice bag, pour chile sauces into hot sterilized jars and seal. Makes 12 2 cup (500 ml) jars.
