Number of Servings: 48

Ingredients

    2 Tbsp yeast
    1/2 cup warm water
    1 tsp. honey

    4 cups whole wheat flour
    1/2 cup oil
    1/2 cup honey (less the teaspoon mixed with the yeast)
    2 eggs
    2 tsp salt
    1 Tbsp cinnimon
    1 Tbsp vanilla extract
    1 1/2 cups warm water

    up to 3 cups of white (or whole wheat white flour)
    Poppy seeds, sesame seeds or cinnamon/sugar mixture for top

Directions

Makes 4 loaves of bread or 2 loaves with 12 mini loaves

In a small bowl, mix above 3 ingredients - let bubble

In a lg bowl mix until not sticky the remaining ingredients

Put in an oiled bowl and cover to rise for 1 hour - i add gluton also to help in this process follow directions on the box for amount

Punch down the dough to remove bubbles. Form loaves and put on greased cookie sheet or parchment brush with egg white and sprinkle with desired topping. Bake in preheated oven at 325 degrees for 20 minutes or more until a hollow sound. Let cool and enjoy.

    The dough turned out very sticky, and I ended up adding quite a bit of white flour. I made two small loaves, but they still ended up being quite large. The flavor was good, but they stuck to the baking sheet (even with oil) so they didn't look too pretty. - 11/6/09
