Ingredients

    1 cup Quinoa (dry measure)
    8 cups fit & active chicken broth (Aldi's)
    1 8oz can sliced muchrooms (drained)
    1 10oz box birdseye chopped frozen spinach
    1 brick extra firm tofu (349gms),diced
    Romano Cheese (optional)

Directions

cook Quinoa according to package instructions, set aside. In a 6qt stock pot combine chicken broth, spinach, mushrooms and tofu, bring to a boil. Reduce heat to low and cook until spinach is completely thawed, add Quinoa stir and serve. For added flavor, sprinkle a little romano cheese over the top
