Introduction

I love sweet potatos better than white and this is a nice alternative. This is not an exact science. All you need is a very soft cooked sweet potato (microwaved is okay too), and butter, salt, and possibly brown sugar (or sugar altherative) to your taste. All you need is a very soft cooked sweet potato (microwaved is okay too), and butter, salt, and possibly brown sugar (or sugar altherative) to your taste.

Ingredients

    1 large sweet potato
    1/4 c. milk (or as much as needed to reach desired consistency)
    1 tbl. butter (margerine, smart balance, all work fine)
    .25 tsp. vanilla extract (optional)
    salt to taste

Directions

Preheat oven to 450 degrees. Wash sweet potato, spray with non-stick cooking spray, wrap in foil and bake for 45 minutes or until very soft.
Once it has cooled a bit, peel the baked potato and put in a bowl with butter and vanilla extract (which is optional) and mash. Add milk slowly as you mash it together so as to reach your desired consistency.

Optional- add brown sugar (or sugar substitute), cinnamon, ground cloves, nutmeg, or pumpkin spice; whatver you like to suite your personal palate.
