Introduction

A Very easy recipe using items already in the pantry, minus the pumpkin. This recipe produces 12-18 muffins, depending on the size of your muffin tin. Ingredients

    1 cup allpurpose flour
    .5 cup whole wheat flour
    1 cup canned pumpkin, I use whole 15oz can
    1/3 cup vegetable oil
    2 large eggs
    1.25 cup sugar
    1/2 tsp baking soda
    1/2 tsp salt
    1 tsp pumpkin-pie spice

Directions

1. Pre-bake oven 350F. Put liners in muffin tin
2. Whisk flour and baking powder in small bowl
3. whisk remaining ingredients in large bowl until smooth.
4. Add the flour mixture until just combined
5. Divide batter between muffin cups (about 3/4 full).
6. Bake until puffed and golden brown, about 20-30 minutes. Wooden pick should come out clean when inserted into the center.

Makes 12-18 Muffins

    I make something like this,but this is what I do1Box of Ducan Hines Moist Deluxe spiced cake mix
    1Can(16oz) 100% pure Pumpking
    Use cake pan or u can make it as muffins too
    Bake @ 350 for 35 mins(according to on box)
    Top with the whipped cream in spray can
    It tastes soo Good and its only 3.5 gra

    Very Good
    I made mine with baking soda and they turned out great! I made 12 regular sized muffins, and am counting 1 muffin as 1.4 servings in my tracker (simple math problem to figure out).
    This was the first pumpkin muffin recipe I found on here that was a 'real' recipe, and didn't call for a cake mix!

    Tasty but confusing. The recipe lists baking soda, but in the instructions call it baking powder. Given the other ingredients, I chose the baking powder. Also, there's a big calorie difference between 12 muffins and 18 smaller ones. Are the 144.2 calories for the larger or smaller? - 10/31/09
