Introduction

This is a lower calorie, lower sodium version of "Tex Mex Calzones (Chef Meg's Makeover) Recipe", and uses AZIAS_MOMMY's Whole Wheat Thin Crust Pizza Dough.
I loved the recipe, but needed it to fit my special dietary needs.

Ingredients

    1/2 pound ground turkey - 93% lean
    1/2 cup onion - chopped fine
    2 garlic cloves - minced
    3/4 tsp ground cumin
    1 tsp chili powder
    1/2 cup red bell pepper - chopped fine
    3/4 cup tomato puree
    12 oz pizza dough - Whole Wheat Thin Crust Pizza Dough (see AZIAS_MOMMY's recipe, it is what I used - 12 oz is slightly less than half her recipe)
    1 cup mozzarella - shredded
    1 egg white, beaten

Directions

1. Adjust oven rack to upper third of the oven and Preheat to 425 degrees.
2. Heat a large skillet over medium high heat. Add ground turkey and cook 5 minutes, stirring to crumble.
3. Add onion and garlic; continue to cook for an additional 4-5 minutes or until onions are translucent.
4. Add spices and cook for 1 minute to bring out the flavors in the spices.
5. Add chopped pepper; continue to cook 1 minute.
6. Remove mixture from heat and stir in tomato puree.
7. Divide dough into 4 equal portions. Roll out dough into 4 circles and place 1/2 cup of turkey mixture on half of the dough circles then top with 2 tablespoons of cheese.
8. Using a pastry brush or fingers, brush the egg mixture on the border of the dough.
9. Fold dough over turkey mixture and press with a fork to seal.
10. If you prefer a crisp crust, brush some additional egg wash over the top. (This step is Optional)
11. Bake 10-12 minutes or until golden brown.

Makes 4 Calzones / Empanadas
Serving size is 1 Calzone / Empanada

    Couldn't find whole wheat Pizza dough, but I had frozen a taco-ized batch of ground turkey and used it here. Real easy grab and go - heats up better in a toaster oven than microvave though. Will make again - 5/27/10
