Introduction

Ingredients

    3.5 c. of spaghetti sauce
    12 lasagna noodles (I use the boil-free kind)
    1 large egg
    1 c. cottage cheese (1% milkfat used)
    1/2 c. shredded parmesean cheese
    1 T. basil
    2 cloves garlic, minced
    3 c. part-skim mozzarella cheese
    1 10-oz package frozen spinach (low sodium), or 1.33 c. of fresh spinach

Directions

1. Thaw frozen spinach, drain.
2. Preheat oven to 375 degrees.
3. Mix egg, cottage cheese, garlic, basil and parmesean cheese together in a bowl.
4. Spray 9X13 pan with nonstick spray.
5. Spread 1/2 c. sauce on bottom of pan.
6. Layer 3 noodles on top of sauce. It's okay if there are spaces between noodles, the noodles will expand.
7. Layer 1/3 of cottage cheese mixture on noodles.
8. Layer 1/3 of the spinach.
9. Spread 1 c. sauce on spinach.
10. Layer 1 c. mozzarella.
11. Repeat 3 noodles, cottage cheese, spinach, sauce and mozzarella.
12. Layer 3 more noodles, spread remaining cottage cheese and spinach (no sauce or cheese this layer).
13. Layer 3 noodles, spread rest of sauce and remaining mozzarella.
Bake, covered, at 375 degrees for 50 minutes. Makes 8 4.5by3 in pieces.
