Ingredients
-
Safeway Old Fashioned Oats Oatmeal, 2 cups
Domino Light Brown Sugar, 0.33 cups
Craisins Original Sweetened Dried Cranberries, 30 grams
Trader Joe's California Walnut Halves & Pieces, 20 grams
Baking Powder, 1 tsp
Silk Light Vanilla Soymilk, 1.5 cup
Brummel & Brown Spread, 2 tbsp, MELTED
Egg, fresh, 1 large
Treetop cinnamon applesauce cup, 1 serving
Directions
preheat oven to 375.
combine first five ingredients in one bowl and mix well. combine the wet ingredients (soy milk, applesauce, butter (melted), and egg) in another bowl.
spray 8x8 pan with cooking spray. mix wet ingredients into dry ingredients and put in the pan. cook for 20 minutes.
(NOTE: i cooked for about 35 minutes... next time would turn down to 350 degrees and cook for longer, because middle was slightly wet and edges were slightly crisp, although it hardened after cooling. ALSO can try letting mixture set for a few minutes after mixing wet and dry to let oatmeal absorb some of the moisture.)
also: delicious.
