Great way to get your veggies. This is like a crustless pizza, and so simple to make. Eat it for breakfast, lunch or dinner! You can use any mix of veggies you have on hand. Ingredients

3 Large eggs
.25 cup of onions, chopped
1 cup of red, yellow and orange peppers, chopped
1 garlic clove
.25 cup of mushrooms
1 cup of spinach
.5 cup of tomatoes, chopped
.25 cup of Monterey Jack cheese, shredded
squirt of lemon juice
Directions
Saute the peppers, onion, and garlic in margarine until soft on med-low heat, then add mushrooms with a squirt of lemon juice and sauted a little longer then add spinach. Beat eggs with 1 tbsp of water. When spinach is wilted pour beaten eggs over the veggies, making sure it gets all around the pan. While it is setting add tomato and shredded cheese and any seasoning, if desired. Once the bottom is cooked a little remove from heat and put under the broiler for about 5-10min until bubbling and browned. Cut into 2 or 4 servings. Serve with toast or just by itself.
