Ingredients

    2 x 200g firm white fish fillets, skin on
    1 clove garlic, crushed
    1 Tbsp finely grated lemon rind
    1/4 cup dry white wine
    2 Tbsp chopped parsley leaves
    Sea salt and cracked black pepper
    1 cup snow peas, blanched
    Lemon wedges to serve
    *40g butter optional [add 216 calories]*

Directions

Pan sear the fish, skin side down, for 2-3 minutes. Turn the fish and cook for a further 2-3 mintues or until browned. Add the garlic, lemon rind and wine to the pan and cook for 1-2 minutes or until the fish is cooked through. Plate fish on snow peas with lemon wedges and dress with the stock..

*If using butter add to the stock and melt before dressing the fish.*
