Ingredients

    1 green bell pepper chopped (about 1.25 cups)
    1/2 an onion chopped (about 0.75 cups)
    1 cup long grain white rice (uncooked)
    1 - 14.8oz can chopped tomatoes (salt free preferably)
    2 tsp chili powder
    1/2 tsp cumin
    1/2 tsp paprika
    2 cloves garlic chopped

Directions

Heat a tablespoon of olive oil in a pan over med-low heat.

Add veggies and rice. Cook until rice begins to brown.

Add spices and garlic, cook 2 minutes longer while stirring.

Add canned tomatoes, then fill can with water and add that too. Add salt to taste.

Bring to a boil, then cover and reduce heat to low. Cook 12 - 15 minutes until rice looks cooked. Remove from heat and let stand 15 minutes. Do NOT remove cover until final 15 minutes have elapsed.

Sprinkle with grated cheese if desired.

Serving size: 1 Cup

    I did the recipe calculator on this, because I eat rice all the time and it just didn't seem right
    this recipe has 266 calories per cup!

    I'm not really sure how we came up with such different numbers, perhaps the spark recipes caloric content for white rice is for cooked?

    delish! I skipped the canned tomatoes and used fresh ones and substituted the can of water for chicken broth. - 8/8/09

    This is the same as a family recipe we have made for more than 50 yrs. Yes the rice is raw when it is sautéed in a bit of annato oil. At this point a pound of Ground beef is added then the onions and garlic. We also use a very sharp cheddar for the topping. Black olives make a great garnish. - 4/25/09

    THIS IS GREAT! I JAZZED IT UP ALITTLE. ADDED BLACK BEANS AND COOKED CHICKEN AND MADE IT A WHOLE MEAL. HEALTHY ALSO CAUSE I USED BROWN RICE. - 4/21/09
