Ingredients

1 large package of orange or mixed fruit sugar free jello or two regular size sugar free jellow
2 packs of Neufchatel cheese
Pineapple packed in its own juice - no sugar added
mandarin orange slice packed in its own juice - no sugar added
2 c hot water
Juice from fruit and cold water to make 2 cups
Directions
Prepare jello as per package
Reserve one c for cheese mixture
Place in 1/3 cup in parfait glasses or in Triffle bowl.
refrigerate until set (30 minutes)
refrigerate remaining jello until set (30 minutes)
blend reserve cup jellow with Neufchatel cheese until creamy - set aside and chill
1. In parfait glasses place 1/2 of pineapple and mandarin orange slices on top of set jello
2. Layer over fruit and jello cheese mixture (about 2 tablespoons)
3. Add remaining set jello, fruit and layer remaining cheese mixture.
4. Refrigerate for another 30 minutes or until ready to serve.
Makes about 8 1/2 cup servings.
