Ingredients



    * Lentils, 3 cup (remove)
    * Onions, raw, 2 cup, chopped (remove)
    * Garlic, 8 cloves (remove)
    * Carrots, raw, 2 medium (remove)
    * Celery, raw, 1 stalk, medium (7-1/2" - 8" long) (remove)
    * Thyme, ground, 1 tbsp (remove)
    * Basil, 1 tbsp (remove)
    * Oregano, ground, 1 tbsp (remove)
    * Salt, 1 tsp (remove)
    * Pepper, black, 1 tbsp (remove)
    * Water, tap, 7 cup (8 fl oz) (remove)
    * *Tomatoes, red, ripe, raw, year round average, 3 medium whole (2-3/5" dia) (remove)

Directions

Place lentils, salt, and water in soup pot. Bring to boil, reduce heat and simmer quietly for 20 - 30 minutes until lentils are cooked. Add all vegetables except tomatoes and the herbs, pepper, and simmer another 20 - 30 minutes until veggies are cooked to your liking. Meanwhile, peel, seed and chop tomatoes (or open one 15 oz can). Once veggies are cooked, add tomatoes and heat through. Serve warm with a drizzle of red wine vinegar on top.
