Ingredients

    Chuck roast.
    1 large potato
    1 can Sweet corn
    2 can peas
    2 can green beans
    1.5 cup mushrooms
    1 medium onions sliced
    2 cups water
    1 Large can tomato juice
    2 cans diced tomatos
    pepper to taste
    garlic powder to taste
    Any other spices you like

Directions

Cut roast into about 1" cubes. Brown in skillet with some type of oil. Then add everything to a crockpot. Turn on low heat and allow to cook for 8 hours. I usuall do this overnite. It adds great flavor with the meat to become tender from cooking so long. Yeilds about 25 servings of 1 cup each.

Lower fat could substitute chicken for beef, could subtitute carrots for potatoes and zucchini for the corn that would cut down on calories and starch which turns into sugar - 1/12/08
