Introduction
Very filling and low fat meal. It is not strictly vegetarian (made with chicken broth) but I didn't know what other category it fit. Very filling and low fat meal. It is not strictly vegetarian (made with chicken broth) but I didn't know what other category it fit.Number of Servings: 6
Ingredients

1 bell pepper chopped
1 medium onion chopped
1 jalapeno chopped
1 can chicken broth
2 cans black beans (drained)
1 can refried beans
1.5 cups of rice
Directions
Cook rice. Spray a large pan with cooking spray. Add bell pepper, onion and jalapeno and cook for 5 min. on medium heat. Add chicken broth and let simmer over low/med heat for a few minutes. Add black beans, stir, add refried beans, stir. Cover and let simmer for 15 minutes (or until refried beans have softened and mixed in with other ingredients). Serve over cooked rice. **You can top chili with cheese or sour cream (which is not included in nutritional information)**
