Ingredients

1 cup shoepeg corn
1 cup chopped green bell pepper
1 cup chopped red bell pepper
1 cup chopped celery
1 cup chopped onion
1/2 cup olive oil
1/2 cup vinegar (your favorite choice)
1/2 cup splenda
Directions
Cut the green and red bell peppers, the onion and the celery
Mix in a food processor to desired consistency
Add the shoepeg corn
In a sauce pan mix 1/2 cup of olive oil and 1/2 cup of vinegar with 1/2 cup of splenda and bring to a boil. Remove from the stove and pour over the vegetables. Stir well.
Refrigerate to allow marinating.
