Introduction

You know that craving you get? The sweet tooth you just can't cut loose? This little cake is fabulous for that! I make it about once every two weeks or so, and it's just enough to kill the craving, but not too much that it kills my diet! You know that craving you get? The sweet tooth you just can't cut loose? This little cake is fabulous for that! I make it about once every two weeks or so, and it's just enough to kill the craving, but not too much that it kills my diet!
Number of Servings: 1

Ingredients

    2 tbs. Flour
    4 tsp. Granulated Sugar
    1/4 tsp. Baking Powder
    3 tbs. Cocoa Powder
    1 dash Salt
    2 tbs. Soy Milk + 2 tbs. Soy Milk (for later)
    1 tsp. Vanilla Extract
    3/4 tsp. Cooking Oil

Directions

In a coffee mug, combine all ingredients except for the 2 extra tablespoons of soy milk. Mix well with a spoon until it forms a cake batter-like consistency and all dry ingredients have been mixed in.
Microwave on high for 1 minute. Test center to make sure it's done-- if not, continue microwaving in 15-second intervals until you're pleased with it :)

    Good
    was quite dry and crumbly, but quick! makes a really small serving. i substituted whole wheat flour. used less vanilla extract (seemed like a lot for a little cake.) the taste of the baking powder was evident, which is probably why so much vanilla is called for. also too sweet for my taste. - 4/23/10
