Ingredients

    3 -12 oz bags of fresh black eyed peas
    2 cans diced tomatoes and green chilies(rotelle)
    1 purple onion, diced
    6 sliced thick HEB bacon
    2 cups small red potatoes
    salt and pepper to taste

Directions

Soak peas overnight (these were presoaked). Then saute onion and bacon together....put all ingredients in crock pot and let simmer for 6-7 hours.
