Ingredients

    4 large portobello 'shrooms
    1/4 C fat-free Italian dressing
    1/3 C Low-fat mayo
    1/4 C salted roasted sunflower seeds (optional)
    2 tablespoons pesto
    4 whole grain rolls, toasted
    4 slices yellow or red tomatoes
    1 cup arugula

Directions

Makes 4 "burgers"

1. In a large ziplock, set on a shallow dish, combine mushrooms and Italian dressing. Seal bag. Marinate at room temp for an hour.

2. place mushrooms on rack of uncovered grill for 5 to 6 minutes until tender. You can cook them in the oven as well.

3. Meanwhile, in a small bowl , combine mayonnaise, sunflower seeds and pesto. Spread evenly on both sides of your rolls....... Then put some on the buns. : )

4. Top each roll with a 'shroom, tomato slice and 1/4 of the arugula. feel free to add onions if you like.

    This was an fantastic recipe. I really enjoyed it! I sauteed some onions and didn't have argula so instead used some baby lettuce mixture. Yummy!!! - 1/30/10
