Introduction
This is a very nutritious and filling dish. I make it for lunch but it is also a great side dish. My teenage daughter and her friends love it. Ingredients

4 or 5 sweet potatoes peeled and cubed
1 can of artichoke hearts or a frozen bag of artichoke hearts
1 onion chopped
1 tbs olive oil
2 garlic cloves chopped
olive oil spray
A handful of feta cheese
sea salt and pepper to taste
Directions
Preheat oven to 400
Spray potatos with olive oil spray and mix with garlic, sea salt and pepper in a large bowl. Lay potatoes on a baking sheet and roast in oven under tender about 20 minutes.
While the potatos bake, sautee onion in olive oil in a large frying pan. Add artichoke to onion and cook together until onion is transluscent and soft about 10 minutes.
Take potato out of the oven and toss with artichoke mixture in the large frying pan.
Add more pepper if needed and sprinkle the feta on top.
Then serve!
1 cup serving:
*use low fat feta to reduce fat
