Introduction

Creamy Potato Soup that has enhanced taste from fresh herbs Creamy Potato Soup that has enhanced taste from fresh herbs
Number of Servings: 6

Ingredients

    1 Large Onion - Diced
    4 Tbsp. of Margarine
    1/4 C. of all-purpose flour
    1/2 Tsp. of Thyme
    1/4 Tsp. of Rosemary
    1 12oz Can of Evaporated Non-Fat Milk
    Salt to taste
    Pepper to Taste
    2 Large Potatoes, peeled and diced
    3 C. of Water

Directions

Boil potatoes in water until soft (about 20 minutes)

Saute diced onions and butter until onions are soft.
Add Flour and stir
Add Rosemary and Thyme and stir
Add salt and Pepper
Stir in slowly Evaporated Milk
Bring milk and ingredients to a boil. boil for 2 minutes or until thick.


Blend potatoes and liquid in a blender, in batches, until smooth. Pour potato mixture into milk and heat through about 2 minutes.

Serve
