Introduction

Ingredients

    1/2 lb lasagna noodles (9 pieces)
    1-1 1/2 jar of sauce (I add 1.5 tsp oregano, 1/2 tsp basil, 3 cloves garlic, 1 chopped and sauteed onion)
    10 oz frozen chopped spinach, thawed with water squeezed out
    1/2 lb shredded mozzerella
    1/2 cup parmesan cheese, grated or shredded
    2 eggs
    15 oz Ricotta or 4% fat cottage cheese
    1/2 tsp salt

Directions

beat eggs, ricotta, salt, spinach, and 1/4 cup parmesan
spray 13x9 pan with nonstick spray
preheat oven to 350 F
cover bottom of pan with a little sauce
Make 2 layers in this order: noodles, 1/2 cheese mix/1/2 mozzarella/1/2 sauce
sprinkle remaining parmesan cheese on top of 2nd layer
cover with foil sprayed with nonstick spray
bake at 350 for 60 minutes
let cool for 10 minutes
cut into 12 squares
