Introduction

Awesomeness found on the back of can - Hands down BEST spinach dip I've had. I actually add a bit more of the spinach than the recipe calls for since it IS spinach dip!
Perfect served with tortilla chips (not included in stats), in fact... Toss in some black beans and/or chicken serve with tortillas or rice instead of chips and call it dinner!

Number of Servings: 4

Ingredients

    1 cup onions, chopped
    1 Tbs olive oil
    2 cans (14.5 oz) Mexican Stewed Tomatoes; drained & chopped
    1 can (4oz) green chili peppers, canned; drained
    1/2 cup Frozen spinach, thawed & drained
    2 cups shredded fat free Cheddar Cheese
    8 oz. fat free cream cheese, softened
    1-1/2 Tbsp red wine vinegar




Directions

1. Preheat oven to 400.
2. In a large skillet, saute onions in oil until softened; remove from heat.
3. Add remaining ingredients to skillet and blend together.
4. Pour into a shallow 9" baking dish and bake until bubbly and lightly browned. 30-40 minutes.
5. Serve with tortilla chips & add hot sauce as desired (not included in stats)

    Had this with Kini on Christmas Eve and OH MY was it delish!!! I like the add chicken and beans and call it dinner idea! I may do that this week! YUM! - 1/2/10

    Did not add the green chili peppers and used regular diced tomatoes. We are NOT a spicy household. Was a side for our chicken. - 1/5/10
