Introduction

Number of Servings: 8

Ingredients

    About 2 cups of dry lentils, cleaned
    4 cups water (plus extra)
    1 medium onion, chopped
    3 cloves garlic, chopped
    4 tbsp olive oil
    1 tsp dried oregano
    2 whole bay leaves (do not crush leave whole)
    salt to taste
    1/4 cup tomato sauce
    1 tbsp red wine vinegar
    a dash of cayanne pepper to taste to add some kick!

Directions

Clean lentils and rinse thorougly. Add lentils to a large pot, add enough water to cover lentils well. Bring to boil. Drain water and rinse lentils. Add lentils back to pot, and add 4 cups water, and remaining ingredients. Cover, bring to a boil, then reduce heat to a simmer. Simmer covered for 1 hour, add more water if necessary. Soup should thicken slightly.
