Introduction

Ingredients

    1 - 16oz can Black beans
    1c fresh sweet corn, removed from husk
    1c cucumber, diced
    1c bell peppers, chopped, mix of red, yellow, orange
    1c plum tomatoes, chopped
    1c celery, chopped
    1c red onion, chopped
    6 cloves garlic, minced
    1 - Chipotle Chilis in Adobo Sauce, minced
    4T Adobo Sauce
    1/4c olive oil
    1/4c fresh lime juice
    S&P to taste
    1T cumin

Directions

Chop and mix together all ingredients in a lage non-reactive bowl. Let sit for 2 hours to allow flavors to blend.

Makes 32 1/4cup servings
