Ingredients

12 oz (dry) whole wheat penne or rotini
1 medium zucchini, cubed
1 cup coarsely chopped mushrooms
1/3 c canned tomatoes (or more if you want. I just used what I had leftover)
1.25 cups pasta sauce
1/3 c low fat ricotta
1/3 c cottage cheese
2 c fresh spinach
1 can great northern white beans
3 T grated parmesan
1/2 c mozerella
basil and oregano to taste
Directions
Preheat oven to 425. Spray a large lasagna pan with cooking spray.
Cook pasta until al dente.
Steam zucchini and mushrooms with veggie steamer.
Blend cottage cheese, ricotta, basil and oregan, and spinach in food processor.
Combine ricotta mixture with pasta sauce and canned tomatoes.
Drain and rinse beans.
Toss steamed veggies, beans, and cooked noodles with sauce mixture.
Spread pasta and veggies in a pan. Sprinkle lightly with mozerella and parmesan.
Bake 8-10 minutes until cheese is melted and sauce is bubbly.
Makes 6 big servings
