Ingredients

2 medium potatoes, scrubbed, sliced thin
1/2 onion, sliced thin
1 Tbsp olive oil
3 eggs
1/4 tsp smoked paprika
salt and pepper
Directions
Preheat oven to 375F.
Heat oil over medium flame in a large saute pan, and saute onions and potatoes for 5 minutes, until onion softens (Try not to break potatoes). Turn all into a pie plate or quiche pan, arranging so slices lay flat. In a small bowl, beat eggs with paprika, add healthy shakes of salt and ground black pepper to taste. Pour eggs over potatoe/onion mix, giving pan a good shake so eggs settle between veggies.
Bake in oven for 30+ minutes until edges are brown and top is set. Serve with a side salad for a complete meal, or be indulgent and have it between slices of bread in a hearty sandwich.
