Introduction

Necessity is the mother of invention. This is a very loosely done recipe, with the things that I already had lying around, so feel free to add other things you like/have. Ingredients

    4 Cups Arugula
    2 Cups cooked whole wheat tortellini
    2 Cups chopped bell pepper
    1/3 Cup Vinagerette salad dressing (I used homemade, but feel free to sub a bottle you have lying around)

Directions

Mix everything together in a large salad bowl. Toss with dressing. This can be served immeadeately, but will be tastier if it sits so the ingredients have a chance to meld together. Makes 4, 2 cup servings.
