Introduction

Vegetable soup is one of my lifelines for healthy eating. It's low calorie, tasty and a comfort food. I usually make a double batch and freeze several quarts. Ingredients

    1 pound of frozen soup or frozen mixed vegetables
    4 cups chicken stock
    2 cups diced tomatoes
    2 tablespoons tomato paste
    1/2 cup chopped onion
    1/4 cup chopped celery
    1 tsp. dried parsley
    sale and pepper to taste

Directions

Add all ingredients to a 4-5 quart pot. Bring to a boil, reduce heat and simmer for one hour.

This works well in the pressure cooker too. Cook on high for 10- - 15 minutes, depending on how tender you prefer your vegetables.

Makes 8 one cup servings.
