Introduction

Ingredients

    3 cups cooked brown rice
    16 large peeled shrimp, cut in half
    3/4 cup frozen peas and carrots
    4 green onions or scallions, small diced
    3 large eggs, beaten and scrambled
    3 tbsp olive oil
    3 tbsp lite soy sauce
    3/4 cup chopped broccoli

Directions

Beat eggs in a small bowl. Heat oil in wok or large skillet. Scramble eggs until almost done, then add broccoli. Cook for 3-4 minutes, then add rice, peas and carrots and diced onion. Cook until warmed, then add shrimp and cook until they have just turned white, then add soy sauce, stir and cook for 1 more minute.

Serve immediately.
