Introduction

Combines pinto beans, diced ham, rice, onions, sweet red pepper slices with light orange juice- yogourt sauce flavored with salsa or sweet chilli sauce. Will feed a family of 4 or five. Ingredients

    Brown rice , 1 cup
    Ham regular or low fat - 2 cups diced
    Spanish onion about 1 cup chopped
    Sweet red pepper , thinly sliced in chunks about 1 cup
    Pinto Beans one can with sauce about 2 cups
    Becel light margarine, 3 tsp.
    Orange juice, about third of a cup
    Plain fat free yogurt about half a cup
    Salsa picante sauce or sweet chili sauce to taste

Directions

1. Soak one cup of Brown rice in 2 cups of cold water.
2. Meanwhile, dice the ham into two cups of cubed ham.
3. Chop one spanish onion - to about one cup
4. Slice a medium sweet red pepper into bite sized strips - about 1 cup.
5. Put Becel margarine in a large skillet or use olive oil and saute' the onion and red peppers.
6. Cook rice in microwve steamer for 10 minutes.
7.Now add the diced ham to skillet of onions and peppers continue to saute'.
8. Add the pinto beans with sauce from the can to the skillet and stir to mix well - continue to heat on low medium heat.
9. Once rice has been steamed stir into Ham Bean mixture in the skillet - heat through.
10. Take one third cup of orange juice and whisk into half cup of yogurt.
11. Add to skillet and stir well.
12. Less than medium heat, let it simmer ans stir all together about five minutes to heat through.
13. Serve with light sauce but you may add extra sauces like ketchup or salsa before eating. Grate cheese over the whole will taste great bur add a few calories.
14. Fill at least half of the plate with green salad.
15. Serving size is half cup to three quarters of a cup.
