Introduction

Number of Servings: 12

Ingredients

    1.5 lb. Pork - Cut into Cubes
    2 onion - chopped
    4 potato - cut into equal chunks
    3 large Carrots - cut into equal chunks
    1 garlic clove - diced
    2 cans stewed tomato
    1 can tomato sauce
    1 can tomato paste
    3 cups chicken broth
    1 tbsp Chili Powder
    1 tbsp Ground Cumin
    Juice of 3 limes
    2 Tbsp Olive Oil

Directions

In large pot heat olive oil, toss in pork, onion, garlic and saute for 10 min until meat begins to be uniformly brown. Add remaining ingredients except the Lime Juice. Simmer for 45 minutes until carrots and potato are tender and meat is cooked through.

Add lime juice and serve. Makes approx 12 - 1.5-cup servings.

Goes well with rice and corn tortilla's.
