Ingredients

Kellogg's All-Bran Cereal, 4 cups
Shredded Wheat Spoon Size Cereal, 2 cups
Water, boiling, 2 cups
Butter, salted, 1/2 cup
Applesauce, unsweetened, 1/2 cup
Buttermilk, lowfat, 4 cups
Egg substitute, liquid (Egg Beaters), 1 cup
Whole Wheat Flour, 5 cups
Raw Granulated Sugar, 1.5 cups
Baking Powder, 3 tsp
Baking Soda, 3 tsp
cinnamon, 3 tsp
nutmeg, 3 tsp
Apples, fresh, 2 cups, chopped
Carrots, raw, 2 cup, chopped
Walnuts, 1 cup, chopped
Directions
Combine cereals, add boiling water and butter. Cover until butter melts and water is absorded in cereal. Add applesauce, buttermilk and eggs and mix well. Combine flour, sugar, baking powder, baking soda, spices and add all at once to cereal mixture, stirring just until moistened. Stir in apples, carrots, walnuts. Bake at 400 degrees for approx. 23-28 minutes.
Makes 13 1/2 cupes batter which yields 54 muffins (regular sized) or approx. 40 muffin tops. Can store in refrigerator for up to 4 weeks or freeze in batches.
