Ingredients

    1 small onion, chopped
    1 red pepper, chopped
    1 tomato, chopped
    1 can of romano beans
    1 c. water
    1 small potato, cubed
    1 carrot, chopped
    1 tsp. cumin
    1 tsp. lemon juice

Directions

Sauté onion and pepper in oil. Add tomato, beans and water, then potato, carrot, cumin and lemon juice. Simmer for about 20 minutes.

    Incredible!
    Easy, quick, delicious, nutritious! I wasn't sure whether or not to drain the beans, so I half drained them! When I make again, I'll be adding more / different spices to give it a bit more kick! - 1/20/11
