Ingredients

    1 15-oz can black beans (rinsed well)
    1 15-oz can chick peas (rinsed well)
    1 15-oz can blackeye peas (rinsed well)
    1 medium onion, chopped
    1 bunch cilantro, chopped
    2 tsp paprika
    1/2 tsp. cumin
    salt and pepper to taste
    juice from 1 lime (~ 1/4 cup)
    2 cloves of garlic

Directions

In hot pan (sprayed with no-cal cooking oil), add onions, garlic, paprika, cumin, salt, pepper. Saute until onions are translucent. Toss in refridgerator bowl with beans and cilantro. Chill. Serve as salad.

Makes 14 1/2-cup servings.
