Ingredients

    10 small beets
    5 medium new or red potatoes
    4 cloves garlic, peeled
    2 tbsp. balsamic vinegar
    1 tbsp. olive oil
    1 tsp. dried marjoram
    Sea salt and pepper to taste

Directions

Add all ingredients to a large baking pan or casserole dish. Cook at 400F for 45 - 60 min. or until the potatoes and beets are tender.

    This was awesome. Took a little longer than an hour to get the beets tender, but the flavor was great! A little spicy with the pepper, a little sweet with the balsamic. Thanks! - 3/31/10

    2 hours in the oven and beets were still not cooked. Perhaps the beets should be roasted on their own at a higher temp for the 1st hour. - 9/5/10
