Introduction

This is a simple recipe for bison meatloaf. Go wild with the spices (I usually add salt, pepper, garlic powder and onion powder). Adding real onions would be a good touch, too. Ingredients

    1.5 lbs ground bison
    1 egg (beaten)
    1 c plain oatmeal

    Any spices you choose

    2 T Ketchup or BBQ sauce (not calculated into calorie count because the calories differ from brand to brand)

Directions

Preheat oven to 350 degrees. Mix ingredients in a large mixing bowl. Form the meat into a log shape and place in a baking dish (the same pan you would use for any type of meatloaf). On the sides of the log, fill the pan with water so that the meatloaf is not quite completely covered. Drizzle exposed area of meatloaf with BBQ sauce or Ketchup (this is not added to the calorie count because the calories differ from brand to brand). Check meatloaf a couple times during baking to make sure that the water has not evaporated. The meatloaf cannot cook dry (or you'll end up with a dry, crumbly mess!).

    i actually used 2 duck eggs, chia seeds, ground flax seed, and some oats with my bison meatloaf, then topped it with shredded mexican mix cheese (cheddar, kolby jack, mozzarella). everybody had seconds. - 11/9/13
