Ingredients

1.25 cups of better 'n' eggs substitute
1 cup fat free half and half
5 oz of reduced fat shredded mild cheddar cheese
5 oz of reduced fat shredded cheddar cheese (sharp, swiss, whatever you like)
16 oz bag of chopped frozen spinach (cook according to bag instructions)
1 cup of chopped cooked broccoli (its 1 1/2 cups of frozen broccoli)
6 slices of Healthy Choice ham, turkey or meat of your choice (enough slices to cover top of quiche)
salt, pepper, basil, onion powder, garlic powder to taste
Directions
Drain spinach well and saute in a pan to evaporate all the liquid, salt to taste. In a bowl, add eggs, half and half, and cheese along with spices. Mix well. Spray a 9 x 13" glass pan with Pam cooking spray. Layer the bottom of the pan first with spinach, then with broccoli. Then add the egg and cheese mixture and spread it around the pan. On the top of that, add the ham or other meat, pressing it into the mixture, but not submerging it, keeping it on the top.
Bake in a preheated oven at 375 degrees for 35 minutes, quiche is done when a knife in the center comes out clean.
