Introduction

Fast and delicious combination that is low fat and packed with nutrients! Fast and delicious combination that is low fat and packed with nutrients!
Number of Servings: 6

Ingredients

    1 can Black Beans, drained
    1 can golden sweet corn, drained
    1/4 c. chopped sweet bell peppers
    1/3 c. chopped onion
    1/3 c. chopped carrot
    1 tblspn dried basil
    1 tblspn dried parsley
    1 tblspn dried cilantro
    3 cloves garlic, finely minced (or substitute garlic powder)
    1 tblspn extra virgin olive oil

Directions

Heat olive oil in a large sauce pan, add peppers, onions and carrot. Saute over medium heat for 10 minutes, stirring occasionally until onions are transulcent. Add corn, black beans and all spices. Simmer on med/low heat for about 10 more minutes or until heated through.

    This is positively yummy! I left out the carrot, basil, cilantro and added cayenne, cumin, jalapeno, & salsa. - 2/21/10
