Ingredients

1/4 cup sucanat
2 Tbsp chopped pecans
.75 Tbsp ground cinnamon
.25 cup agave nectar
.25 cup stevia for baking
2 Tbsp butter - softened
.25 cup egg whites
1/2 cup reduced fat sour cream
1 Tbsp water
1/2 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3 tbsp powdered sugar
1/2 tbsp orange juice
Directions
Makes 9 muffins.
Preheat oven to 400.
Spray muffin pan with Pam.
Combine first 3 ingredients and set aside.
In a mixing bowl, combine agave, stevia and butter, mix until smooth (2-3 minutes).
Once combined, add egg whites and blend until smooth (2-3 minutes).
Add sour cream, water and vanilla.
In a separate bowl combine salt, baking powder, baking soda, and flour.
Make a well in the center and poor sour cream mixture in. Fold until just combined.
Add all but 3 Tbsp of cinnamon/nut mixture. Fold 4-5 times.
Separate into 9 muffins and bake 20-25 minutes.
For drizzle, combine 1/2 Tbsp of orange juice and 3 Tbsp of powdered sugar.
When muffins are cooked, remove immediately from muffin pan and let cool for 10 minutes. Pour drizzle over top and serve.
