Introduction

Super simple soup that is really filling but low on calories. Super simple soup that is really filling but low on calories.
Number of Servings: 8

Ingredients

    2 onions, chopped
    4 garlic cloves, sliced
    1 c. red pepper, chopped
    2 large carrots, chopped
    3 c. beef broth
    3 c. water
    1 c. white rice
    1 Tblsp. oil
    2 Tblsp. red wine

Directions

Heat the pot with a little oil. Add red pepper and let sear until dark on all sides. Add onions and saute.

Add broth and garlic and blend in the blender until smooth. Return to the pot.

Add remaining ingredients, except the red wine. Simmer for 40 min. Add wine, cook another 5 min. and serve.

Makes about 8 1 c. servings.
