Introduction

Makes 6 cups in total. According to the comments on the web site where I found the recipe (Allrecipes.com) it is good hot or cold. I plan on eating it for lunch so one cup is ok, could also be used as a side dish or as a salad... pretty versatile. I think the next time I make it I will only use one can of black beans.... Ingredients

    Onion
    Canola or vegetable oil
    Garlic
    Quinoa (Keen-wa)
    Vegetable Broth
    Cumin
    Cayenne Pepper
    Frozen Corn
    Black Beans
    Fresh Cilantro

Directions

Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

    Incredible!
    I made it today and my family loved it! I didn't have cayene pepper so I used chili powder, and used green onions rather than yellow. It was still yummy. - 6/3/12
