Ingredients

    1 bag Trader Joe's Whole Wheat PIzza Dough
    2 oz Trader Joe's Soy Mozzarella Cheese
    4 oz Gimme Lean Ground Sausage Style
    3 cup Spinach
    .5 cup Tomato Paste (so salt added variety)
    1 cup Zucchini, sliced
    2 tbsp minced garlic
    2 tsp Mrs. Dash Garlic and Herb
    2 tsp Crushed Red Pepper Flakes (more or less, to taste)
    1 tsp olive oil
    a bit of whole wheat flour (for dusting your work surface)

Directions

Preheat oven to 400 degrees F.

Cook your spinach until wilted and set aside. Grill or pan-sear your zucchini slices and set aside. Crumble the Gimme Lean sausage and cook in a pan if desired, and set aside.

Split the dough into two equally-sized portions.

Dust your working surface with flour and roll/stretch one portion of the dough into a circle, as if making a miniature pizza. On half of the dough circle, layer half of each ingredient (except olive oil) however you'd like. *Note: Make sure you have about 1/4-1/2 inch perimeter!* Fold the other side of dough over and form into a moon shape. Roll the edges together and press down with a fork to seal.

Repeat this with the other half of the dough and toppings.

Place both calzones on a lightly floured baking sheet or pizza stone. Brush olive oil on top of each calzone.

*If they get brown too soon, cover with foil!*

Bake for 20-25 minutes or until golden brown.

Makes two calzones. One serving = 1/2 calzone.
