Ingredients

    Ground Beef 93% Lean, 1 lb
    Lasagna Noodles, 9 noodles
    Pasta Sauce, 3 cups
    Diced Tomatoes (no salt added), 14.5 oz. can
    Cottage Cheese, 1% Milkfat, 2 cups (16 oz)
    Mozzerella Cheese (shredded/part skim), 4 oz.
    Egg, 1 large
    Spinach, fresh, 1 cup

Directions

Preheat oven to 375 degrees.

Cook lasagna noodles according to package instructions. Set aside and let cool. While lasagna noodles are cooking, brown the ground beef, then drain and place back in pan. Add the pasta sauce and diced tomatoes to the ground beef and simmer. In a small bowl, mix together the cottage cheese, egg and 1/2 cup of the mozzerella cheese.

In a 13 X 9 pan, spoon a thin layer of the sauce and beef mixture. Set aside 1/2 of sauce & beef mixture. Then layer as follows:

Place 3 noodles down, top with cottage cheese mixture, then 1/3 of the spinach, then 1/3 of the remaining sauce. Repeat until you've finished the 3rd layer. Top with the 1/2 cup of pasta sauce that was set aside, and the remaining mozzerella cheese.

Bake at 375 degrees for 30 - 45 minutes, until cheese is melted and sauce is bubbling. When you remove from oven, let cool for 5-10 minutes, then slice into 12 even pieces. Serves 12.
