Introduction

Nana always made this SO well. It's her classic gingerbread cake with a healthy twist and is about 1/2 the calorie count as the regular recipe for the same size piece! Makes a great alternative to boxed birthday cake! Nana always made this SO well. Ingredients

    0.5 c. Splenda (white)
    1 can Pumpkin, UNsalted (not "pie filling") about 1.5 cups
    2 egg whites
    3/4 c. molasses

    1.5 tsp baking soda**
    1 cup HOT water (Put **SODA in to dissolve.)

    2 c. whole wheat flour
    0.5 c. white flour
    2 tsp ground ginger
    3/4 tsp ground cloves
    1 tsp salt
    2 tsp cinnamon




Directions

Cream together Splenda, pumpkin, egg whites & molasses.

Sift dry ingredients together and add to above mixture.

Add the hot water/soda liquid and beat until smooth. If needed, add more hot water (plain) a little at a time.

Bake in a sprayed, 9 x 13 inch pan at 350 for 35 minutes. Allow 10 minutes to cool then cut into 16 squares.

MAKES 16 servings.
If desired, sprinkle cinnamon on top & serve warm.
