Ingredients

    1 c milk
    1 egg
    1/4 c oil
    1/4 tsp vinegar
    1/3 c potato or corn starch (4 tbsp)
    1/2 c corn starch (5 tbsp & 1 tsp)
    1 tsp salt
    1/4 tsp baking soda
    1 tbsp baking powder
    3/4 c corn meal
    1/2 c sugar

Directions

Preheat oven to 375. Mix all wet ingredients in medium bowl; add all dry ingredients & stir well (be sure to remove any lumps - batter will be thin). Pour batter into greased 8x8 baking pan. Bake 28-32 minutes or until done.

For muffins - fill cups 2/3 full & bake at same temperature for 15 minutes (makes 12 muffins).

Makes 6-8 servings (depends on how big you cut pieces) - nutrition info is based on 8 servings.
