Ingredients

1 Tbsp Olive Oil
1 small onion, chopped
1 large clove garlic, crushed
1 large sweet potato, cubed
3/4 Cups chopped red kale
1 small orange/tangerine (cutie), juiced
2 pieces sun dried tomatoes
1 small zucchini, sliced
6 oz. fully-cooked ham
Directions
Heat olive oil in large skillet at medium high heat. Add onion, garlic, and a sprinkle of salt. Let cook just until they start to soften.
Add sweet potato, kale, and orange juice. Turn down heat to med-low, cover, and cook 15-20 minutes, stirring occasionally.
Add sun dried tomatoes, zucchini, and ham. Turn heat back to medium and cook until zucchini is at desired tenderness, about 3 minutes. Salt and pepper to taste.
Serves 2-3 as full meal, or up to 6 as a side. (Nutrition amounts based on a serving of 3).
